For a birthday gift, I once spent a day shadowing Jonathan at the Hungry Ghost. It was a fun, very interesting experience, and what I remember most is him telling me that baking at home seemed more challenging than what he does every day in the bakery. I've paged through the book, but wouldn't say no to winning a copy!

Love this: The dough is the manifestation of nature in our domestic lives, right, and it's alive and we have to not just manipulate it we have to collaborate with it. We have to know that it has a life of its own. If we want it to feed us, we have to really give it what it needs every day. … but Sacramento’s high temps are making it hard to give my starter what it needs every day!

Thanks for this great interview. Many, many years ago I was fortunate to be included in a two-day class Jonathan and Cheryl led at the Kneading Conference in Maine. They were both so kind and generous with their knowledge and information. The group was supposed to make many loaves to feed the participants the next day and there was a large Hobart mixer in the space. But it did not work. "Well, this is the Kneading Conference," Jonathan said. "Let's knead!" And so we did. Please include me in the drawing for a copy of the book. Thank you.
