It was my pleasure to help. I appreciated that you provided me/us with a way to channel concern about the war in Ukraine into a concrete form of support.

Made this yesterday and it turned out great! I did find it to be a tad salty for my taste, so I might cut that in half next time. Also might add some more coconut as it's hard to notice it in the final product. Really happy with another use of discard!

interesting. My wife wanted more salt, which is how I landed where I did. But maybe the result varies depending upon what salt you use?

Could be! I used a sea salt instead of kosher (what I had handy). I'm fairly sensitive to salt though, so I wouldn't take it as a critique.

I really loved this granola! I didn't add the fruit when I made it, but just add it in as we eat it.

Loved this. I used 2t diamond crystal kosher salt and stirred right into dry ingredients. My usual go to granola is the 11 Madison park granola on NYT cooking which has 2T kosher salt with about 35 percent more oatmeal and more sweetener to balance.

How (and how long) can the granola be stored?

In a bag or jar or any other sealable container, at room temperature. It should last at least a month.
