yes and no...the brioche formula can be made into a nice challah by using oil in place of butter. But I've got a guest post coming next month which will be a deep dive into challah, so stay tuned for that!

At what point do you add the mashed potatoes to the dough. I see the use of the potato water but not the mashed potatoes.
