Andrew, I love your blog and your recipes. I also love that you have a point of view and try to live an ethical life. It’s easy to ignore things like Martin’s and pretend that not buying them doesn’t make a difference. But it does.

Ugh, this is just so upsetting. Martin’s really is delicious, and my kids (20 months and 4.5 yrs) really like it. But I can never support them again! So hard to find things kids will eat. I love to bake, but haven’t tired your version yet, because you know, two young kids and no free time for myself. Martin’s was such an easy option, and honestly, Kings Hawaiian is really good too. Just don’t know how to make sliders work in place of regular sized buns.

I didn't know that about Martin's and actually don't think I've ever bought any but I definitely won't be buying any in the future. As for shake shack we don't have them here.

I’m baking potato buns for a couple restaurants in CT for this very reason. They’re finicky, but we seem to have finally mastered them. I’m interested to see your recipe!

Hawaiian sweet bread is inspired by the Portuguese sweet bread pao doce brought to the islands by immigrant workers. Purchased fresh from a specialty bakery or made from scratch at home, it resembles choreg a bit. Everyone goes to Leonard's on Waikiki for malasadas, but don't skip the pao doce! Packaged King's is good, but nothing beats the freshness of a newly made loaf or rolls, as with all baked goods. King's consumed on the mainland is baked on the mainland, but it brings a little aloha and Portugal to your day. King's bakery has a very interesting history too.

Thank you Andrew for making note of the situation. I live in Pennsylvania and have always used Martins rolls and potato sandwich bread. That immediately stopped after reading about their donation and their steadfast support of a candidate that intends to enact laws that should not take place. As for shake shack there were always better burger places. I never quite understood the hype.

Hi Andrew,

I ran across this recipe in an article online about Martin's poor choice in politics. I made it and everyone loved them to the very last crumb. I wish I had recorded the source. Sandy

1 egg

463 g flour

14 g yeast

31 g sugar

9 g salt

41 g butter

30 g milk powder

220 g Luke warm water

Combine all dry ingredients and whisk to combine well.

Add liquids in. Mix and then knead.

Rise 1 hour

Form into 6 parts for large or 8 for smaller buns. Make balls and place in pan lined with parchment. Brush with olive oil.

Let rise 1 hour.

Brush with egg wash and sesame seeds

Bake 425 degrees for about 20 minutes until golden brown.

Just a quick question about the recipe for potato buns you posted… the recipe calls for cool water, but in the first step you mention to let the water/turmeric/annato/potato flake mixture to cool for 10 minutes before the next step. However, you only call to mix it with a paddle for one minute, which to me doesn’t seem like it would increase the temp very much at all. Did you mean to ask for hot water? Thank you!

Now that we're in the midst of lobster roll season, I'll have to ask what brand of buns my favorite spots use--or just enjoy them at home (which living with you makes not only possible but more tasty). Thanks for making it easy to make choices that fit with my values.

Hey man, new here... Not at all happy with politics (especially leftist authoritarian politics) with bread talk.

Funny that in the olde days...most of us realized that the government is not and has never been our friend. I only hope that the current rush to embrace government authoritarianism is a phase that you younger people will get over.

I would think that the fiasco that was the COVID debacle would have taught you that...but some are slow to learn.

At any rate, I hope to keep reading your excellent bread adventure without being insulted with fascist propaganda.
