Flatbreads class - YES! There are so many versions of such a simple bread and I have made some myself. But there is a balloon flatbread sprinkled with sesame and nigella at our favorite Mediterranean/Turkish spot in Troy, NY, to eat with an assortment of delicious meze that I would like to recreate at home. Theirs is baked in an open wood burning (I think) oven. Of course it quickly deflates. But we love it! M’semen is another flatbread I’d like to attempt.
