Long ago one of my UK relatives told me that the name, Welsh Rabbit, began as a slur from the more prosperous English. The Welsh coal miners were so poor they couldn't afford even a rabbit, were reduced to toast and cheese for sustenance.
Many of my ancestors were Welsh who left the coal mines for the tin mines of Cornwall, then two generations left Cornwall for the copper mines of Michigan - and have spread all over the country since then. Most of us can now afford rabbit, or filet mignon, if we wish. Maybe the price of cheese is a barrier now.
