It sounds awesome and accessible. I hope to try one day. It brought back memories of when I once attended a local multicultural food festival where women were making flatbread on cushions. It was so long ago that I can't remember which country's booth they were with, but the technique was unforgettable.

After reading that pannettone is "the Mt. Everest of bread making," did anyone else take that as an exciting challenge? I just spent the last hour reading about the process. :-P

I would LOVE that! The more I read about it, the more I want to make it, and your recipes are always so solid and comprehensive. My Italian grandmother would always bring one over for Christmas so they bring back a lot of memories. :-)
