What a beautiful story! The experiences described are what home bakers who are just learning how to bake bread are experiencing too. When the loaf finally poofs in the oven in the first phase of baking, when the bread sings as it cools after the final bake, when the dough sticks to everything in sight, and when you amass so many loaves you are trying to unload them on people so very happy to receive them. There are art and music therapists, why not have bread therapists too? Kit looks so happy now. She must have struggled so much in her teen years. Too little attention is paid to mental health, and so many teens are hurting. Kit and her father were so fortunate to find the therapeutic pastime to help her cope with her depression. I enjoyed this story so much. Please share our comments with the Kit and her father to let them know how touched we are. So difficult to motivate people to bake bread, but those who persist and never give up find the greatest reward. Sometimes, it doesn't come out, but failure is a path to success the next time.
