I baked this delicious English Muffin Loaf for the first time this weekend while watching Andrew's "Substack ON" conference presentation. Very interesting and fun to see!

I followed the recipe as published but used an 8"x4" metal pan as others have mentioned. The loaf fit perfectly and had a healthy rise.

Also as others described, the crumb had yellow-brown mottling even though I followed the recipe by dissolving the soda in water. I will attempt to better dissolve and incorporate next time. Maybe I'll try dissolving the soda in a little more water.

I had great results! I was so proud when my thermometer read 78F when I tested the dough after mixing. I made it easy on myself with room temp. levain. I had bubbles early on but I let it go 90 minutes to achieve doubling. I am a rule follower :-) so I followed the recipe exactly. This morning's breakfast was very tasty.
