I’m busy getting ready for my Pizza al Taglio & Focaccia Doubleheader class tomorrow, so this week’s pizza box is a quick one.
I Walked 600 Miles Across Japan for Pizza Toast
Start with this wistful, beautifully-photographed Eater story by Craig Mod about walking across Japan in search of pizza toast, a snack that was first invented to appeal to American GIs. It’s served in traditional Japanese cafes known as kissaten, many of which are going out of business as they fall out of favor with newer generations of Japanese.
After you read that, you can watch Mod’s video of pizza toast being made at one kissaten, Kissa Būgen:
Enjoy pizza toast, and I’ll see you all next week. Have a peaceful/pizzaful weekend, all.
